The Department of Nutrition Science at Purdue University (West Lafayette) and the Purdue University Cooperative Extension Service recently donated over 400 recipe books for low income households titled Fast and Flexible: Low Cost Recipes for A Family or Fifty to the Lafayette Urban Ministry. The books were originally developed in the mid 1990’s and could not be sold because they included the old USDA food pyramid. The food guide is now called Choose-My-Plate.

Beginning Thursday (April 4, 2013), these food preparation guides will be given out to clients who come to the St. John’s/LUM Food Pantry. In addition to food safety suggestions and equivalency tables, the recipe books include helpful tips, suggestions on how to spice dishes up, and advice for individuals with income limitations such as the availability of cooking staples, appliances, and utensils.

The St. John’s/LUM Food Pantry team and Purdue faculty are hopeful that these recipe books will have a positive impact on clients looking for ways to stretch their food dollars, to better utilize their food allotment and eat healthier as a family.

Look for additional updates in the future regarding other innovative ways LUM is empowering clients to make informed decisions regarding their health and nutrition.
